To embrace the beauty of wine, and its colorful history, one has to appreciate where and how the product is made.
I first began my journey in wine with Inniskillin’s Ice Wine, which is wonderful and quite expensive, thus a luxury more than a staple. However, undaunted, I continued to lust after this amazing concoction, because I love how this product evolved, and the unique history which ties it to our community, and links the U.S. and Canada via the creation of a product which has only been attempted in rare pockets of the world, where the exact micro climate must exist to truly create a masterpiece. Ice wine is the ultimate recycled wine, for it utilizes frozen grapes and/or other fruits from the vine, usually frozen due to an unexpected blizzard (so unique to Buffalo and Southern Ontario), mixing what could be a bitter concoction with what I deem to be traditional New England spices and essences. Icewine is like a deeply flavored brandy, but with amazing layers of flavor. One small mouthful, held on the palate, astounds the senses with an incredible medley of intermingled flavors. Schultz Ice Wine has become my favorite, not only for its amazing essence, but for its reasonable price. There’s nothing like it. I savor a bottle for months, allowing myself just enough to top off a great meal or when I desperately need a Zen moment. During this pandemic, I found myself craving a bottle. If I must be stuck alone, then it should be with a bottle of Icewine. Amen.
